A little diced apple makes these rock cakes moist and fruity. Quick and easy to prepare, they are ideal to cook with younger members of the family, who will enjoy making them as much as eating them. Use black bananas. In fact, if they turn black, put bananas into freezers to keep for when you're ready to prepare. Once defrosted they will be pulp like and mix into cake batter much more easily giving you a cooked consistency like mud cake. Sometimes requires a little extra time in the oven. Don't panic - just keep testing with a tester and take out when ready. Can be iced with a chocolate ganache. Is delicious once cooled but the flavour really kicks in after 24 hours.

A quick and easy banana cake recipe to prepare using storecupboard ingredients, this cut-and-come-again cake makes a healthy snack for hungry children just back from school, or a handy addition to lunchboxes. It’s a banana cake best made with very ripe bananas, so it’s a good way of using up bananas that have been sitting in the fruit bowl for too long.

This recipe was given to me by my mother, and I've since handed it down to my daughters. The moist cakes are topped with icing that comes together in no time. And if you'd like even more banana flavour, stir some mashed banana into it.

I was given this about 20 years ago, baked by a cookery teacher friend. I've never dared change it, it's been such an absolute family favourite, always gorgeous, never lets you down. We particularly love the frosting, which uses a little brown sugar instead of icing sugar, giving a more subtle flavour. Some like the pineapple pieces and nuts, others don't: they affect texture rather than taste so use as preferred.

This is a very moist and light carrot muffin. It's not too sweet and not greasy like other carrot muffins/cakes. The white chocolate cream cheese icing adds just enough sweetness to round it off.
