Spatchcocking is a method for opening small game or poultry birds out flat, so that they cook quickly and evenly and stay beautifully succulent. This can be made on a grill or a barbecue.
Tasty BBQ Chicken
Its the simplest and easiest marinade that I discovered while at university. All you need is chicken, honey and Marmite - and don't worry those of you how don't like Marmite, once cooked it doesn't have marmite's distinct taste.
Garlic Chicken
This is great for people on diets and saves you having to eat the burgers and sausages ... great with a mixed salad. Leave it as strips or cut up into smaller chunks after cooking. You can experiment with the marinade I sometimes add a splash of basalmic vinegar.
Barbecue chicken in pomegranate barbecue sauce
I created this the other day after being sent a sample of pomegranate molasses and wanted to use its sweet and sour flavours in something cooked, so I could see whether the molasses tasted good, or not. It got the family seal of approval so it cannot be too bad! Finding simple family food is great as it makes cooking from scratch easy and satisfying as children will eat these sort of meals without fuss and complaint - every parent's dream.
