A deliciously hearty chicken soup. Chicken breasts are barbecued, then sliced and simmered in a chicken stock with porcini mushrooms, sun-dried tomatoes, artichokes, parsley and white wine. Serve with crusty bread.
My dad used to cook this at parties and it was quite famous. Sadly he died a couple of years ago so now I carry on the tradition. It is nice served with loads of mango chutney and it can be cooked in the oven if it's raining.
This is a Jamaican-inspired dish combining the flavours of barbecued jerk chicken with a lovely jerk-flavoured cream sauce, all tossed with pasta. If desired, you can cook the chicken breasts under the grill or in a ridged griddle pan.
A wonderful recipe for the barbecue. Marinated chicken is wrapped with streaky bacon and skewered with mushrooms and pineapple. Try it at your next BBQ or dinner party!
