Use black bananas. In fact, if they turn black, put bananas into freezers to keep for when you're ready to prepare. Once defrosted they will be pulp like and mix into cake batter much more easily giving you a cooked consistency like mud cake. Sometimes requires a little extra time in the oven. Don't panic - just keep testing with a tester and take out when ready. Can be iced with a chocolate ganache. Is delicious once cooled but the flavour really kicks in after 24 hours.

Yummy and healthy - ish cupcakes, they almost melt in the mouth when eaten fresh out the tray before topping is added!

"Caramel in any form is very sublime, but here it's combined with white chocolate to make a wonderful cake slice. My mother used to cook something similar when we were kids, and it always went down a treat." -Phil Vickery

This is a very moist and light carrot muffin. It's not too sweet and not greasy like other carrot muffins/cakes. The white chocolate cream cheese icing adds just enough sweetness to round it off.

Got some older bananas that need using up but want a change from the usual? This really really yummy recipe is one I modified from a plain banana cake and it is now so popular it gets requested all the time. Best of all it can be done with ease in a food processor, so it's also really fast to make for a picnic or sudden guests! Also kids love it, it's got chocolate in it! Doesn't need icing or buttering, is plenty good on its own.

This recipe takes some time and quite a few baking trays, but it's well worth it. It makes plenty so you can give away as gifts with good coffee beans.

People don't usually think of apple and chocolate, but this unique apple cake recipe is very moist and rich. I have also made it in loaf tins, and given it away for Christmas gifts.
