I made this recipe up for my boyfriend who adores apples and pork. It's very easy and good served with roasted or baked potatoes and salad.

Chicken breasts and drumsticks baked with artichoke hearts and black olives in white wine and chicken stock; a touch of tarragon provides a perfect finish to this savoury Mediterranean-inspired dish. Serve with crusty bread to mop up the delicious juices.

This is a recipe I shared with my girlfiends from my recipe club last year.

Kasha, or buckwheat, is one the fastest grains to cook. It's a non-wheat grain that has a nutty texture and mildly aromatic flavour which goes very well with vegetables and a creamy cheese sauce.

There's an easy to find (and make) kids meal out there on the web called Cowboy Casserole, which uses sausages and beans... I decided to make it for Leo yesterday and also to make a slightly different version for myself. I altered the recipe and gave it a Spanish twist - hence the name. This is a good one for a cold day.

A really yummy chicken casserole for 2-3 people. Perfect winter warmer, with just a hint of ale! Potatoes are on the top of the casserole so saves on washing up :-)

A savoury lemon sauce seasoned with a hint of sesame tastes fabulous with tender chicken and crunchy Oriental vegetables. Serve plain egg noodles or rice to add some satisfying starchy carbohydrate.

Pretty much a classic recipe, with some added extras. It can be adapted so easily, and you can add almost whatever you have left in the cupboard. You can serve with normal bread, mashed potato, or my favourite, garlic bread.

For winter comfort, serve this creamy chicken and vegetable casserole with mashed potatoes or polenta and seasonal greens.

A very rich and warming casserole for one of those colder days. In spite of its simplicity the flavour is very "WOW".

A melt in the mouth meal that guests ask for again and again. So easy to make.

This is my grandmother's recipe. Beef is slowly cooked until tender, with soured cream added at the end to create a luscious gravy. Serve with plenty of bread to mop up the gravy.

This is something that was passed from my Mam and is very easy to make. A real comfort food.

This traditional American dish is a one-pot meal of succulent beef and tender-crisp vegetables in a nutritious and tasty broth. The tangy beetroot and onion relish cuts through the richness of the meat and is an inspired finishing touch. Serve with crusty bread to mop up the juices.

Take advantage of small, trimmed leeks, turnips and potatoes to speed up classic dishes with a ‘throw-it-all-in’ approach. Brown everything briefly to add flavour, then bring it together with a creamy sauce. Delicious!

Slim pasta spirals called fusilli are delicious cooked in a casserole of beef and vegetables. The dried, uncooked pasta is added towards the end of the cooking time so that it retains its al dente texture while still absorbing the savoury flavours of the meat, vegetables and oregano in the rich stew.

A beautiful tender and mouthwatering casserole, so full of flavour. It forms a juicy and delightfully tasty gravy with carrots, celery and onion. Delicious served with boiled rice or couscous. My family couldn't get enough of this and were fighting to book the leftover bit for lunch the next day. A real success.

A family favourite. I don't even like chops and I like this recipe! I ran out of plum jam for this recipe once and used apricot instead. It still tasted good. I normally leave out the celery.

Pork fillet, red-wine, mushrooms and cream. You can't go wrong with this dish. Its moreish, homely and yet classy. A favourite dinner-party casserole of mine. Serve with plain boiled basmati rice and green veg or a salad.

Cooking the fish in layers with sliced onions, potatoes and tomatoes gives this satisfying casserole a different feel to a classic fish stew.
