Shepherd's Pie Made with Leftovers
Some time ago I had Shepherd's Pie that was made with shredded rather than minced lamb. It was to die for and I really wanted the recipe. I love doing a roast shoulder of lamb and I thought let's give it a go with the leftover meat. The result was stunning, so I've decided to share the recipe. This is my first recipe submission!

Lamb keema is a mouthwatering spicy lamb mince curry. Every bite is so full of taste. It is a great use of lamb mince, and quite easy to make with storecupboard spices.

This is a popular meat dish from southern Norway. Lamb and cabbage are layered and stewed with peppercorns. Serve with boiled potatoes sprinkled with parsley.
THE Baked Pasta Dish
This is a rustic Spanish, spicy, mince based baked penne pasta dish which is perfect for a no-frills family supper. It has come about through trial and error in an attempt to replicate a dish that I ate in a Spanish farmhouse some 15 years ago. In our family it is simply called THE Pasta Dish. The sauce makes 5 portions and so it becomes economical and quick after you've cooked the batch of sauce.
Irish Stew with Parsnips
Parsnips aren't traditional and are optional in this recipe, but I like the flavour they add. If you use a tougher cut of meat, you can leave it to simmer longer before adding the potatoes. This is fantastic on a cold, blustery day or served with a pint or two of the black stuff on St Patrick's Day.
