This is quick, really easy and even more tasty. My take on Matthew's jambalaya is inspired by a good friend who cooked us this dish and it's really, really yummy. It's one of those dishes were you can use up veg that needs to be eaten. I have a habit of throwing ingredients in without weighing them and the veg varies depending on what you have left over. I use mugs as measures, please note that this is not the US weights it's just a mug full of rice or veg - hope you get that!

You could also omit the chicken for a nutritious vegetarian option. I think it's pretty versatile. It would be delicious served with tortilla chips, guacamole and a fresh green salad.
