Most rich fruit cakes are high in fat and added sugar, but this one is an exception. It's relatively low in fat, and depends mainly on dried fruits soaked in apple juice for natural sweetness. Decorated with nuts, and glacé and crystallised fruits, it makes a healthy cake that would be festive enough for Christmas.

This isn't a traditional Christmas pudding recipe, but I love it simply for that fact! The variations on this are endless because the filling can be any combination of mincemeat, pumpkin and/or cranberry sauce, but here's my favourite combination.

This is a fairly basic Christmas plum pudding recipe but unlike other recipes it can actually have plums in it. Unfortunately the ingredient list is so long it isn't easy to make it in less than industrial quantities! This could prove fortunate, however, as they make great food gifts. You can substitute a mixture of fresh and dried apricots of peaches for the plums if you wish.
