This recipe was given to me by my mother, and I've since handed it down to my daughters. The moist cakes are topped with icing that comes together in no time. And if you'd like even more banana flavour, stir some mashed banana into it.

Chocolate and courgette fairy cakes with nuts - what could be better? Children will never know they're eating anything but chocolate. Use pecans in place of walnuts if you like.

I've been Diagnosed as allergic to Dairy and Muffins on a sunday morning for breakfast was just too good to give up!! You can Replace the rasberries with other fruits - Blueberries, Strawberries, Apple, Rubarb, Dried Fruits, Banannas even Chocolate Chips.

These cupcakes have four parts, but they are worth it! Watch your friends' face when they bite into one and discover the tart and tangy curd inside! Some special tools to make these cupcakes a knockout are a piping bag and star tip, and a small torch to brulee the meringue. It is fun to experiment with citrus curds. If you have meyer lemons or rangpur limes available, subtitute it for the regular lemon juice and decrease the sugar by about 1/4 cup. Yum!

These are mini fairy cakes so they are a nice size for kids. They are easy and so quick to make, too. Children can decorate them any way they like. Feel free to use whatever type of chocolate you prefer. We have fun making these every year!

I make these so they have a good kick to them, but it's not necessary. It's the icing that gives them the real ginger strength/flavour, the stem ginger is really just for texture. Lemon icing is a good substitute.
