This is a Greek summertime favourite recipe, full of the aromas of fresh vegetables and herbs. It is easy to make and you can replace or add any vegetables you like and still get a great dish. You can serve it hot or room temperature.
A summer classic. My version calls for tomatoes, olives, feta, peppers, onions and cucumbers, all sliced, chopped and tossed with a great dressing - red wine vinegar, olive oil, lemon juice and herbs.
Peas are normally considered a side dish, but in Greece it is common to eat a plate full of vegetables as a main. This traditional way of cooking peas is so satisfying yet healthy - not to mention easy - it will most certainly become a favourite. Serve with crusty bread and feta for the ultimate meal!
