Colcannon is a simple, warming Irish potato dish, combining mashed potatoes with shredded cooked cabbage and chopped spring onions. Here it is used as a lovely pie topping for chicken cooked in cider with sliced apples and carrots. The pie is a well-balanced meal in itself, needing no accompaniments.

These are a lovely Halloween treat for kids. Oranges are hollwed out and carved to look like jack o'lanterns, then filled with a mixture of the fruit and ice cream. Our kids prefer chocolate chip mint ice cream but you can use any flavour. Try and find oranges with thick skins and keep the carving small to minimise the "ooze"!

These fluffy American style pancakes make a special breakfast on cool autumn mornings. My boys loved to help me cook a batch for a 'breakfast for supper' night around Halloween. Use any and all decorations you like to make jack-o-lantern faces on the pancakes. Try broken chocolate bar pieces, banana slices, raisins, dried cranberries or chopped nuts.

These are a great for a children's Halloween party! Chocolate cake mix is an easy option when you are making so many. Use liquorice laces for the legs and mini jelly beans or Smarties for the eyes.

A must every Halloween - this recipe is great fun! A fake hand is frozen in a rubber glove and then presented in a bucket or glass punch bowl. Dress the hand up with a few Halloween gimmicks like spiders.

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending spring onions with creamy mashed potatoes. Great on its own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.
