A splash of brandy makes this light and smooth mousse special enough for a dinner party first course. Poaching the chicken livers with vegetables and herbs, instead of frying them, gives them lots of flavour, and fromage frais adds the richness that would traditionally be added by butter, but without the saturated fat.

Chicken livers can be found fresh or frozen in most supermarkets and are an extremely economical standby ingredient to have in the freezer. The addition of a few well-chosen flavouring ingredients, like the fresh sage and balsamic vinegar used here, can transform the livers into something rather special.

Calf's liver has a delicate flavour and is exceptionally tender, needing the briefest cooking time. This update on the traditional combination of liver and onions is impressive yet speedy. Serve with new potatoes or diced sautéed potatoes. Delicious!

This is a traditional Italian starter that is, essentially, liver pate served on toasted rustic bread. This is a nice recipe for parties and wine tastings. For vegetarians in attendance, you can also prepare a version with finely chopped (and drained) herbed tomatoes as it is equally delicious. You can serve the dish hot or cold on toasted baguette or ciabatta.

This was my dad's way of making sure our family got our weekly dose of liver. It's one of those recipes that he never wrote down. Most of the time he added it to soup, but once in a while he served it with fried onions.

This dish is dramatically different from old-fashioned liver casserole and a great choice for everyday healthy eating. It is bursting with flavour from the bacon, wholegrain mustard, peppery sage, carrots and swede. Serve it with some simply cooked green vegetables or a crunchy salad.

This is my Dad's (RIP) recipe which he used to cook for me as a little boy. It brings back happy memories for me and is definitely my top comfort food. Served with roast potatoes, chips or creamy mash and peas this is a little slice of heaven! Good honest, warming home cooked food. And as Liver is inexpensive, easy on the wallet too!

If you love liver sausage (Braunschweiger) you'll love this recipe. My mother used to make this for every family get together and it was always a hit. It is best served with rye bread.

This richly-flavoured pan-fried dish is a great way of preparing pig's liver. Lamb's liver can be cooked in the same way. Serve with rice tossed with grilled pieces of smoked bacon and red pepper.
