The inspiration for this dish came from two places, an Italian cookbook I was given for Christmas and a multi-layered cake (30 or 40 layers) made during the bake off programme. Quite a simple yet versatile dish made up of three omelettes with a savoury filling between each omelette layer. I am using Mediterranean vegetables for the filling but you can use any selection of vegetable and/or meat. In fact, this is a great recipe for leftover vegetables and left over Sunday roast. Experiment and enjoy. This recipe will serve four.
A super quick breakfast scramble with red onions, cherry tomatoes and fresh basil. Serve over hot buttered toast.
Looking for new breakfast or brunch ideas? Try this cheesy scrambled egg with a little pesto stirred in. I like it on granary toast.
These tasty little mini spinach frittatas are a fantastic option for a make ahead breakfast when you need to grab a low carb vegetarian option on the go. Make the night before and warm in the microwave if you are short on time. Feel free to substitute frozen spinach for fresh.
A simple quiche recipe without the pastry - just spinach, spring onions and two cheeses. Perfect for a last minute brunch.
This is a much loved recipe from my Italian childhood - it makes a great vegetarian fry-up. Use fresh organic eggs and have a crusty baguette on hand to soak up the delicious sauce.
These light and fluffy scrambled eggs are great for serving a big crowd. I usually make them this way for Christmas morning and I never have much left over!
This makes for an easy midweek supper or special breakfast at the weekend. With no pastry, you save both time and calories!
