I've seen a lot of recipes for this soup; however, my mum-in-law adds tomato puree for a bit of a different flavour and she doesn't add any lentils or beans. It's thick, filling and delicious, and you could make it vegetarian by using vegetable stock.

This is a Persian dish of chicken stewed in a pomegranate and walnut sauce. As they do in Iran, serve Khoresht Fesenjaan with white rice.

Lavash is an unleavened flat bread popular in Armenia, Iran and Turkey. It is traditionally cooked in a tandoor, but you can use your oven! Great alternative to wraps and naan.

This irridescent milk jelly, delicately perfumed with almond, is set off to perfection by the exotic flavours and beautiful colours of the mixed fruit salad. Very little sugar is needed as the fruit provides natural sweetness.

A lot of oil will come to the top of the dish. Don't worry, this is normal - it is the oil from the walnuts. Most supermarkets carry pomegranate juice, or you can find the syrup in Middle Eastern shops.

Wonderfully exotic and colourful, this vegetarian salad captures the flavours of ancient Persian cooking. Dates and sultanas are gently simmered with wine, spices and garlic, to flavour couscous, and then topped with roasted butternut and patty pan squashes, peppers and orange.

This is a Persian dish which I often make for my husband. Rice is slowly simmered with fresh dill, parsley and coriander, along with broad beans and spices. In Iran it is traditionally served with fish.
