Venison is a particularly lean meat and makes a good flavoursome sausage, perfect for this sophisticated version of an all-time family favourite. Serve with broccoli florets or another seasonal green vegetable.

Venison is low in fat and, like all red meat, provides plenty of iron and minerals. It makes a mouth-watering casserole when cooked with beer and winter vegetables. For the best flavour choose a real ale or one of the popular ‘designer’ beers.

Tiny green Puy lentils have a slightly nutty texture and flavour, and are perfect in salads as they keep their shape well once cooked. Here they are mixed with grilled venison sausages and Mediterranean vegetables, plus a handful of fresh rocket leaves. All you need to accompany the dish is some crusty French bread.

My step-mum's recipe for a tasty roast venison. The apple does something magical! The gravy goes great with mashed potatoes.

An easy slow cooker recipe, all ingredients are diced and thrown into the slow cooker with no pre-cooking prep work. A hearty tasting stew that is not 'gamey', it would work just as well with beef.

A rich combination of red wine and venison brings a luxurious, low-fat twist to the ever-popular dish of spaghetti and meatballs. This goes down well at family gatherings and informal dinner parties.

The season for venison is May to October, so this terrine is a good way to make the most of it during the summer months – perfect for picnics and lunches on lazy, outdoor days.

A sweet potato mash flavoured with mustard and orange is the colourful top for this winter pie. Underneath is a hearty and rich-tasting filling of lean venison simmered in red wine with baby onions and button mushrooms. Some simple green vegetables are all that's needed to balance this delicious dish.

Tasty venison is extremely low in saturated fat, with a slightly gamey flavour, and combined with mushrooms, a small amount of meat goes a long way. Cooked in a creamy sauce made with half-fat crème fraîche, then tossed with tagliatelle, this makes a luxurious dish.

Lean venison makes a great terrine. Mixing it with pork and then marinating the meats in port and spices will give it extra flavour and add moisture. Serve the terrine sliced with a mixed salad and wholemeal or Granary bread for a delicious lunch, or use it in sandwiches. It can also be served as a starter for 8.

This is an oriental game dish with a great flavour, and it's so quick and easy to make. Try it over rice or noodles. Sesame oil can be substituted for chilli oil.

Venison stays juicy when it is cooked slowly and gently. Here it is combined with lots of vegetables to make a healthy, hearty family meal.

A classic family favourite, made with healthy venison rather than beef. The traditional potato topping is given extra nutrients and flavour with the addition of parsnip.

Olive is the traditional term for a small roll of meat filled with stuffing. For this special-occasion casserole thin slices of tender lean venison are rolled round a fresh-tasting cranberry stuffing and cooked in a red wine sauce.

This soup has an excellent meaty flavour, rather like traditional oxtail soup but made with leaner venison. The deliciously piquant and fruity blackcurrant relish perfectly complements the rich soup.

Sounds simple - but succulent, tender, flavourful venison doesn't need anything else!

Venison has a deep, rich flavour, and steaks taken from the loin are very tender. Here they are cooked with pears and cranberries. A root vegetable rösti is the most delicious accompaniment.
