No need for a holiday with all our Spanish recipes for tapas, paella, sangria, gazpacho and more.
Colourful and packed with flavours, this thick, flat omelette, called a tortilla in Spanish, tastes good served at any temperature. The classic recipe contains only potatoes, onions and eggs, but this version has extra vegetables and lean ham added. Serve with a green salad.
A very traditional paella with chorizo, chicken, peas, squid, mussels and prawns. The saffron and chorizo give this one-pan meal a gorgeous red hue. A paella pan is recommended.
Fresh tomatoes, green pepper and onion tossed with a simple vinaigrette and fresh parsley taste wonderful after marinating for a few hours.
A very simple and tasty dish, great for a weekday supper. Always impresses when I cook it for guests too and it can be prepared in advance and just popped in the oven, so no slaving away in the kitchen. This is very adaptable, you can literally just about throw anything in, I have listed what I usually include. A fantastic way to use up whatever veg you have left at the end of the week too!
Made with whole oranges – simmered until very tender and then finely chopped – and ground almonds, this classic Spanish cake has a moist, light texture and a wonderful fresh flavour.
