This healthy version will please everyone, even the traditionalists. The roasting time is based on the weight of the joint; 20 minutes per 450g (1 lb) for rare, 25 minutes per 450g for medium well or 30 minutes per 450g for well done.

This is a delicious and super sweet sticky pudding. It's very important to finely chop the dates before soaking to obtain a smooth consistency. This recipe is for a 20 cm (8in) round tin.
