My boyfriend christened this and I think it's a pretty accurate description, chorizo, olives, peppers and potatoes always remind me of holidays in Spain. With the addition of the eggs it's almost like an inside out Spanish omlette.

These little morsels are so easy to make - serve warm or at room temperature for nibbles at a drinks party or eat with salad and some warm bread for quick lunch. Here I have used ham, cheese, sweetcorn and spring onion but there are endless possibilities with different fillings. You will need a non-stick mini muffin tray.
