10 Minute Microwave Risotto
Recipe by:
AUSSIEBEAR
This is a delicious risotto style dish that is quick and easy to prepare in the microwave. You can bulk it up with leftover roast meat and/or roasted peppers, if you like.
Sun-dried tomato and bean risotto
Recipe by:
Norma MacMillan
Moist risotto served with a simple side salad makes a satisfying carbohydrate-rich meal, and the risotto can be endlessly varied – all sorts of other vegetables (fresh, frozen, canned or dried) can be used instead of broad beans. To achieve the perfect texture, use risotto rice such as arborio and add the hot stock in stages.
Lentil risotto

Lentils add extra flavour and texture to this Italian-style mushroom risotto. Serve with roast or grilled vegetables, such as peppers and courgettes, or a mixed salad, for a satisfying lunch.

Chanterelle Risotto

Savoury and cheesy. Superb vegetarian dish for dinner parties. You can substitute Pecorino Romano for Parmesan, and porcinis for chanterelles.
Smoked Salmon Risotto

It is important that you add the salmon at the very last, and leave the risotto to sit for a few minutes off the heat, otherwise you risk losing all the flavour from the fish.
Green bean risotto
Slow cooking is the easy way to cook a hassle-free risotto. This vegetarian risotto is simple yet delicious, and has become a healthy family favourite. I usually prefer recipes where you can just add everything straight to the slow cooker, but the preparation for this dish really is minimal.
Barley risotto with sweet potato, port glazed onion and toasted walnuts
Okay, it could be argued that this isn't a risotto, but pilaf doesn't seem fitting either. Whatever it is, this dish is a vegan delight. I'm not vegan in the slightest, but this is truly a beautiful combination of winter flavours that simply stands its own without the addition of cheese, butter or meat.
Broccoli Risotto

A creamy risotto with broccoli and just a hint of lemon.
Gorgeously Green Risotto
Recipe by:
Louiselombard
This risotto is chock-a-block with green veg, including broccoli, mange-tout, courgette and green beans. This can easily be made vegetarian or vegan by using vegetable stock and leaving out the cheese.
Tuna and Chorizo Risotto Bake
Recipe by:

This novel take on risotto is one of my husband's favourite dishes. The chorizo really adds a nice spice and you can make it as hot or mild as you like. If you don't want the heat, use a regular pork sausage.

Best-Ever Mushroom Risotto

This super-delicious vegetarian rice dish may take a little time to make, but the results are worth it. It's creamy, hearty and packed full of flavour.
Risotto with Beetroot Greens
Recipe by:
friederike
Sometimes at farmer's markets you find really fresh beetroots with leaves that haven't yet wilted. When I find these, I make this fine risotto. It takes a while and you have to stand at the cooker the whole time stirring, but it's definitely worth the effort.
Risotto with Parmesan and white wine
Recipe by:
Maybe
A risotto with melted Parmesan cheese and a good dose of white wine. So simple, yet so elegant and delicious! Perfect as a first course for a dinner party. To make a nice presentation, I filled round plain pastry cutters with the risotto and removed the cutters then top each risotto with a sage leaf.
Risotto al mare
Wonderful seafood risotto packed with mussels, squid, prawns, and scallops flavoured and enriched with Cirio Passata. This is a great seafood experience and the Passata gives it a special edge of tastiness.
