This is mega simple and it doesn't have to be dairy free - just substitute dairy items for non-dairy in list. My breadmaker has a mix and cook setting so I just load it all in and let the machine do all the work. If your machine only cooks, or you are cooking in a conventional oven, just mix all the ingredients together in a bowl with a fork first.
Be patient and gentle with this whisked sponge. There is no butter (except for greasing but you can use oil instead) and it is important to beat the eggs and sugar for at least ten minutes!
