Apricots make a stunning addition to both sweet and savoury dishes. We have fresh and dried apricot recipes for jams, cakes, tagines and lots more.
Jam making is something I learnt from my gran, and though we used loads of different fruits, this apricot jam has got to be my favourite.
A delicious tagine recipe cooked in the slow cooker. Chicken, onions, apricots, raisins and spices are slow-cooked and then served with plain couscous. Enjoy for a wonderful lunch or dinner.
A wonderfully different fruit dessert. Ripe apricots are stuffed with a lightly-sweetened mascarpone cream, then drizzled with a honey and balsamic sauce. Absolutely perfect!
This is a delicious moist cake which my family love. I liked the idea of almonds and apricots together so brought this recipe together. I used tinned apricots, but dried or fresh ones could also be used. To economise, I bought flaked almonds from a low cost German supermarket and ground them myself.
This unique puréed soup is made with red lentils, dried apricots and tomatoes cooked in chicken stock with cumin and thyme. The addition of fresh lemon juice prior to serving intensifies the gorgeous flavours.
