    This nice twist of Vietnamese rice rolls is delicious. Makes for a more filling dinner food, rather than a snack. And it's healthy, vegan and easy to add your favourite fillings. For this picture I used a new type of rice paper with sesame seeds in it However, I would recommend using the regular kind, as these were impossible to fold and also impossible to eat!

    I made this on a whim but it makes a deliciously different dessert. Reminds me of the banana fritters we used to get in our local Chinese when I was a teenager. Serve warm with a little vanilla ice cream.

    You can buy the rice paper spring roll wrappers in Asian shops. These rolls are not fried and taste best dipped in the hoisin peanut sauce. Delicious for a summer party.

    A friend of mine made these spring rolls so I wanted to try making my own - they're not the deep-fried spring rolls you get from your local Chinese but a healthier version. It took a lot more work than I thought to conquer rolling the spring roll wrappers but it was worth it and we had good fun making them! They taste delicious dipped in sweet Thai chilli sauce and the raw veg give them a beautiful crunch.
