Coulis are basically very simple fruit purées, made with raw or cooked fruit, sweetened if necessary. Coulis made with raw fruit will retain more of the vitamin C content, which is otherwise reduced through even the briefest cooking. Almost any soft fruit can be used for an uncooked coulis – kiwi, blackberries, peach, mango and papaya, to name just a few.

I make this easy raspberry coulis recipe with fruit only when in season. If your fruit isn't that ripe or flavourful, you can add the vanilla sugar at the end. Serve this coulis over ice cream, or drizzled over cheesecake. It's also fantastic mixed into drinks.

I always keep frozen raspberries in my freezer. This sauce can be made in under ten minutes, and is delicious over ice cream or cakes. Consider leaving a few raspberries whole for decoration.

I love preparing this sauce with blackberries picked near my home. It is a real treat on vanilla ice cream! If you don't have vanilla sugar, feel free to add some extra caster sugar and then just 1/2 a teaspoon of vanilla extract.

This is the perfect thing to make if you have lots of ripe plums. Coulis are a smooth, thick sauce made by pureeing or sieving cooked fruit. This plum sauce is particularly delicious poured over vanilla ice cream.

Serve drizzled over tarts, stewed or poached fruits or ice-cream. Use seasonal berries and freeze the coulis, or freeze the berries and make the coulis later.
