A healthy vegetarian version of shepherd's pie. This recipe is extremely versatile; add whatever sort of veg and beans you like. Vegetables never tasted so good!
This is an authentic spinach pie stuffed with spinach, onions, cheeses and herbs that are all enveloped by crispy, flaky filo pastry.

A mouthwatering-good vegetable pie.
An original French recipe my mum used to bake. Great to eat with a salad during summer or even winter. Absolutely delicious!!! Can be prepared the day before and served as a starter or main dish. Can substitute Emmental for Gruyere cheese.
This is my recipe for a basic mushroom quiche with home made short crust pastry. It takes about an hour (ish) to bake from scratch including making the pastry. The pastry will be enough for a large flan dish or two of those disposable foil ones (as per the picture). Obviously you can substitute the mushrooms and onions for the filling of your choice and skip the pastry making steps if you are using a ready made case.
This is an adaptation of my mother's recipe. I changed the recipe for my boyfriend who is a vegetarian. I had a Guinness® pie at a pub and it reminded me of how much I love them and I decided he was missing out on the joy!
I love pies (my favourite meal is pie and mash!) but I don't like the fat content of the pastry so I came up with this simple but very delicious idea. Use as you would any ordinary pastry or for pasties. All measurements are approximate. If you don't like the hassle of peeling the squash, you can split it in half, take out the seeds and roast it until it's soft (about 30 - 45 minutes).
A combination of spring vegetables, lively herbs and zesty lemon makes a refreshing filling for a crisp filo crust. This pie is easy to make and so delicious, it is destined to become a firm family favourite. For a hearty meal, serve it with baby carrots and new potatoes boiled in their skins.
