This is a basic, easy stew made with chicken legs or chicken breasts. I like to use a base of onions, celery, and carrots but you could really use any vegetables.
Because the flavour of chicken is quite mild, it benefits from a tasty Jamaican jerk baste, when barbecued or grilled, and this also helps to keep the outside from burning until the chicken is cooked through – especially when cooking over charcoal.
It's not an exact match for KFC but its fairly close and tastes great. You can also use the mixed spices on pork, etc. I am still working on perfecting it, messing around with different spices and the amounts but its a good place to start
