This warm salad uses my favourite potato - jersey royals. Use tinned sardines in olive oil if you're in a pinch. Instead of roasting the potatoes in a preheated oven, start them in a cold oven and roast them as the oven heats. Cooked this way, they brown nearly twice as fast.

Brilliant for a mid-week meal, this punchy pasta dish uses heart-healthy oily fish with a mixture of popular deli foods – salami, olives and sun-blush tomatoes – for speed and convenience.

This Italian dish, Pesce Sarde Marinato, is a delightful way to use fresh sardines. Marinated sardines are perfect with grilled crusty bread as a light lunch or starter. Health-wise Sardines have a higher concentrations of Omega-3, Vitamin D and have less Mercury concentration than other larger fish, so I'll be adding them to my cooking repertoire based on both taste and health benefits.

Fresh sardines are fried to a crispy golden brown, and drizzled with a garlic and white wine vinaigrette then topped off with a sprinkling of fresh mint leaves. Serve this starter with a good white wine.

Cooking fish – traditionally by frying – and then submerging it in a ‘souse’ is a very tasty way to prepare it, and was once a means of preserving. Here sardines are grilled and marinated, then served on a Moroccan-spiced couscous, chickpea and pepper salad. It is a perfect prepare-ahead dish for summer entertaining.

The kids love this dish. It's a quick meal that's healthy, filling and perfect for after school or lunch. The sardines add loads of flavour, are ready to eat, and give you your fix of oily fish. Enjoy!

This dip is ideal for a starter: the prep is simple and quick, and it's economical. Just because it's budget, however, doesn't mean it won't bring a gourmet touch to your party.
