    This is a rich tomatoey curry, with a lot of taste and a proper kick. The recipe has evolved over time and has become a real favourite in my family. I cook it in advance and freeze it in foil takeaway trays. You can add more yoghurt and reduce the tandoori masala powder if you prefer a milder curry.

    Right, I'm going to have to level with you here: I've never been to Kashmir. Hell, I've never set foot in India at all. Which is kind of a shame, you know? So really I've no way of knowing how authentic this dish is. I suspect it’s not very authentic to be honest, however, it is very delicious. I've made it less authentic (probably) by adapting it from a recipe I found ages ago. I was part way through preparing the ingredients when a flatmate called to say that we’d have two extra people for dinner that night. So I needed to find a way to make it go a littler further. I decided to supplement a curry that was mostly chicken by adding mushrooms and butter beans. Both designed to soak up the lovely spicy flavours. Although I've made it made times since, I've never left either ingredient out since.

    I love curry but I've always been far too impatient and busy to sit over a pot for multiple hours. But slow-cooked curries taste great and require so much less effort. No need to marinate, barely any skill required and tastes great. I normally make this for meal prep and create boxes with steamed white rice for my week's dinners.

    This lovely slow cooker chicken korma is minimal effort and maximum outcome. Great for starting well ahead of dinner and freezes well once cooked. This chicken korma uses a whole jointed chicken instead of just the breast to create a richer flavour resulting in lovely slightly alternative korma.
