A traditional Spanish side dish that I've served at parties for many years. But it's a simple, tasty dish anytime!

Ok...there's many ways to make an omelette but this one is a meal. Based on the Spanish tortilla it has potatoes as its main veg but then you can add what you want: in this case it's sweetcorn, courgette and green pepper. I often add chopped chilli or tabasco too.

This is an easy gourmet starter. I often add some chopped green olives to the olive mixture and a little more balsamic. A fresh, rindless goat's cheese may also be used in place of the cream cheese. Serve with slices of toasted baguette or crackers.

This recipe can be eaten as a side dish or as a light meal. It's great with a pork chop and some crusty bread. Its origins date back to North Africa and is one of the very popular choices of tapas in Seville's bars.

This is a quick, garlicky Mediterranean olive spread. Similar to the French tapenade, but without capers. Excellent served with good crusty bread.

This easy tapas dish is enjoyed throughout Spain. Mushrooms are cooked to perfection in olive oil and white wine, and flavoured with garlic, red chilli and parsley.

This dish is also known as tortilla de patatas. Crisp potatoes and onions are incorporated into a pan-fried omelette. It's then served with chopped tomatoes and spring onions.

Known in Italy as a frittata, or in Spain as a tortilla, a flat omelette can be served hot or at room temperature, at any meal. Take a tip from Spanish tapas bars and serve it, cut into bite-size pieces, instead of salty or high-fat snacks with drinks.

Pop some olives and some great flavourings into the oven and you have a fantastic dish. I use a combination of green and kalamata olives for this recipe. You can use any combination of olives. Don’t forget to put out a bowl for the stones if your olives are not pitted. Recipe is from my cookbook Vegetarian Tapas: 150 quick and delicious snacks and bites for sharing.
