A very light moist cake, just like a normal Victoria sponge, but wheat and gluten free! Use margarine rather than butter as it is lighter.

These tasty chickpea-based balls, flavoured with garlic, chilli and lots of fresh coriander, make a delicious alternative to rice or potatoes. Cooked traditionally as an Indian dish the balls would be deep-fried, but here they are baked.

Bûche de Noël is the French name for a chocolate yule log. This one is a heavenly flourless chocolate cake that's essentially a swiss roll rolled with a luscious chocolate whipped cream. Traditionally, Buche de Noel is decorated with icing sugar to resemble snow on a Yule log.

This roulade is made as it should be - without flour. A wonderfully simple roulade made with chocolate, eggs, sugar and little else. Rolling tip: I find it easier to roll up if I turn it out onto a tea towel. It's a bit more flexible.
