    This recipe is a deliciously rich bittersweet chocolate pudding. It began life as a recipe from the great French pastry chef, Pierre Herme, which I copied out incorrectly, but the end result turned out delicious. I have also used a simpler sweet pastry recipe.

    This came about trying to find a good substitute for ricotta cheese in an Italian recipe that called for 400g ricotta; instead I used 200g creamy quark and 200g cottage cheese beaten well together. The layer of raspberry jam is my tweak on the original recipe. Worked really well!

    This is a classic French 'Galette des Rois' tart that's usually made on January 6th to celebrate the religious holiday of the three kings. The filling is usually made with eggs, butter and ground almonds but I've tweaked it to include raspberries. It's delicious served with apple compote.
