Peppers add an incredibly colourful element to loads of dishes. From stuffed peppers and soups to simple stir fries and spicy chilli sauce - find loads of recipes to highlight all sorts of peppers.
Since I am Greek, I have learnt many good Greek recipes over the years! This is one of my favourites. It's a savoury combination of lamb, rice and feta stuffed into green peppers and smothered in tomato sauce.
Red peppers, onion and garlic are sautéed in butter, then simmered in chicken stock and drizzled with cream to create this smooth and delicious puréed soup.
This is a really basic way to roast peppers for use in any recipe. Choose any colour peppers you like, or use a variety of colours. It's even quicker if you use the grill. After they are roasted you can add olive oil and balsamic vinegar, or lightly sauté in olive oil and garlic to serve with feta cheese on crunchy toast.
Good, hot, spicy jelly or jam, which is good with a range of foods. A standing favourite is with Brie or Camembert, on crackers, toast or sandwiches.
A lovely curry that can be adapted to the required strength! Myself and my hubby prefer 'mild' curries, so I use mild curry powder, but any strength can be used! Not many ingredients are used, so this would be good for beginners!
