This is the best vanilla sponge mix I have ever made or tasted and is so easy to make. The key to it is how long you whisk it for and the baking time. You can use the recipe to make 1 whole sponge cake. Just lengthen the cooking time to around 25 to 30 minutes (although the trick is to judge by sight and bounce!)
Banana muffins make a healthy snack for children after school. They are so easy to make and freeze well too. So, make these instead of throwing away those brown bananas!
This is a very moist and light muffin. It's not too sweet and not greasy like other carrot cakes can be. The white chocolate cream cheese icing adds just enough sweetness to round it off.
Make sure you use cute, colourful cupcake cases to make these scrummy cupcakes look even more appealing. I use this recipe time and time again... It's so versatile - you can pretty much do anything you like, adding fruit to the sponge, using different coloured icing and decorations, etc. Just have some fun!
These muffins are extra large and very delicious. I usually double the recipe and fill the muffin tin to the very top to get huge coffee shop sized muffins. Of couse, you can make 12 normal sized muffins if you prefer. Add extra blueberries too, if you want!
