I enjoyed this kale salad a few years ago at a party and then finally got the recipe. Since then, it's been one of my standard salads. I know that kale salad sounds a bit strange, but it tastes delicious and is really healthy!
This salad has the perfect combination of flavours and textures. Swiss chard and kale is tossed with grilled chicken, raisins, walnuts and feta cheese in a honey vinaigrette. Feel free to substitute in Parmesan or blue cheese instead of feta.
This kale salad is vibrant, nourishing and versatile. It can be enjoyed on a warm summer afternoon, or indeed long into the winter season thanks to the long growing seasons of the kale and chard. Swiss chard and ruby chard varieties are at their best from July through November, however some of the more hardy varieties will make it into the New Year. Kale has become incredibly popular recently and for good reason. This powerful vegetable has a long season running from June to February and is also packed with vitamins A, C, B6 and calcium making it a solid choice for getting the most out of your greens. Use as much of the kale and chard stalks as you desire, but remember they do get a little tough and bitter the further down the stalk you go.
This filling, energising salad bowl is loaded with quinoa, beans and hard-boiled egg for a vegetarian meal with great sources of protein.
A colourful, nutritious winter salad. Roasted sweet potatoes have a subtle sweetness that pairs nicely with the caramelised onions and kale.
This is super easy, with just five ingredients. The secret is "massaging" the kale with olive oil and lemon juice. Top with oranges and salted pistachios. You can also make with chard, or a mix of chard and kale.
Massage the salad with your hands, especially the kale, to get the dressing worked into the veggies. This is critical and helps soften everything and really is the most important part!
Made with honey and orange juice, this crunchy kale salad is surprisingly delicious and packed with nutrients.
This is a wonderful and colourful salad for a crowd. It's made with wild rice, kale, red cabbage, red pepper, fennel and a lemon dressing. It works for any time of the year and earns lots of comments whenever I serve it. It also keeps wonderfully, so make it ahead of time with no hesitation. If desired, crumbled blue cheese, toasted and chopped hazelnuts, and/or sliced radishes are welcome additions to this salad.
