This recipe is a deliciously rich bittersweet chocolate pudding. It began life as a recipe from the great French pastry chef, Pierre Herme, which I copied out incorrectly, but the end result turned out delicious. I have also used a simpler sweet pastry recipe.
This traybake is easy to make and a lovely way to use raspberries that are in season or on offer. Kids love them. If you haven't got raspberries, use any sort of berry you like - blueberries, blackberries, etc.
This makes an excellent cheesecake, great for special occasions! Garnish with white chocolate curls if desired.
I had never baked a cheesecake before this; only ever whacked together some cream cheese and mascarpone and put it on top of a biscuit base - and the conclusion is it really tastes much better if you make it from scratch. This cheesecake tastes divine! I made a raspberry coulis and created a marble effect on the top and the outcome was fab. It didn't really sink that much in the middle which was brilliant as well!
