    The most important ingredient in this cake is a beautiful, large, organic, unwaxed orange. And really good extra virgin olive oil. The recipe was given to me by my friend Aziza, who got it from her aunt. It is simple to make but absolutely heavenly.

    Kafteji is something of a Tunisian poor man's food: various vegetables are fried separately and then fried with beaten egg and chopped up together with a large knife. One eats it as a baguette filling.
