What you'll need

To make this mouthwatering meal for two, you will need:

2 sirloin or rib eye steaks
salt and pepper to taste
4 tablespoons demi-glaze or beef stock
5 tablespoons Brandy
120ml double cream
1/2 tablespoon butter
vegetable oil
1 level tablespoon whole black peppercorns
1 handful of sliced mushrooms

How difficult was it to prepare?
  • For this to work you need the very best fillet steak. I used to work in a restaurant and if we ever ran out of meant from the butcher we'd have to go to the local supermarket. That was when we got all the complaints! The recipe is actually a French standard way of cooking steak, but it it defintely isn't easy! Best Irish/Welsh/Scotish/Argentinian steak is essential. Don't go to Asda and expect this recipe to work.

    In the video the mushrooms were still white(uncooked) when you added the cream, also in the video, just after you added the peppercorns, a whole lot of liquid suddenly appeared...what was this and why was it added?
