Whether you are using gas or charcoal, get your barbecue hot.
Place peppers on the cooking rack. If you’re roasting small peppers or chillies, pile them into a wire basket. Close the barbecue cover. Total cooking time will be 10 to 20 minutes.
Check frequently and turn the peppers as they blacken.
Peeling peppers is easier if you remove the skins while the peppers are warm.
