How to roast peppers video

Roast your own peppers and chillies at home to bring out their flavour and add a special smokiness to your dishes. You'll save money to boot, as jarred roasted peppers can be expensive!

This video shows you 3 different ways to roast peppers:

  • Under the grill
  • Over a gas flame
  • On the bbq

Under the grill

Preheat your grill or turn your oven to 250 degrees, gas mark 9. Place the oven rack in the highest position, making sure the peppers can still fit under the grill without touching the top.

Place the whole peppers on a baking tray and slide them under the grill.

The total roasting time will be anywhere from 5 to 20 minutes, depending on the size of your peppers or chillies, and the grill.

Don’t walk away! Keep an eye on the peppers, turning them with long tongs as they brown. The skins will char and bubble—just don’t let them burn.
Over a gas flame

Using metal tongs, hold a pepper directly over the gas flame of your cooker. Turn the pepper as the skin chars. It should take only a few minutes from start to finish.
If you need only one or two peppers, this is the quickest method.
On the bbq

Whether you are using gas or charcoal, get your barbecue hot. Place peppers on the cooking rack. If you’re roasting small peppers or chillies, pile them into a wire basket. Close the barbecue cover. Total cooking time will be 10 to 20 minutes.
Check frequently and turn the peppers as they blacken.
Peeling peppers is easier if you remove the skins while the peppers are warm.
