Choose your chicken

When you’re choosing chicken for the barbecue, remember that boneless pieces cook faster than bone-in.

Give it a flavour boost

Spice rubs add alot of flavour and marinades prevent the chicken from drying out.

Heat the barbecue

For gas barbecues, heat on high for 10 minutes with the lid down.

If you’re using charcoal, fire it up until there’s a good coat of ash. Then pile the charcoal to one side of the barbecue to make a hotter side and a cooler side.

Start cooking

If you’ve marinated your chicken, shake off the excess liquid. Using tongs, place the chicken on the grate, directly over the gas flame or hot coals. Leave room between the pieces so they cook evenly. Let the chicken cook for at least five minutes without moving it. This will crisp the surface and gives it char-grilled marks.

Using tongs, turn the chicken over and let it cook for another five minutes. You can brush with cooked marinade if you’d like.

Finish on low heat

To finish cooking, turn the heat to medium-low, or move the chicken to the cooler side of your charcoal barbecue.

Total cooking time depends on the size and type of chicken pieces you’re cooking:

Boneless pieces take a quick 12 to 15 minutes, while bone-in breast, drumsticks, thighs or wings take about 20 to 30 minutes.
