Enjoy steaks barbecued to perfection - whether you prefer them medium rare or well done! These simple tips and tricks will make it easy to relish BBQ steaks all summer long.

Including searing time, it takes about 12-14 minutes to cook a 3cm thick steak to medium rare, 14-16 minutes to medium, and 16-20 minutes to well done. Turn the steak approximately halfway through cooking.

Prepare your steak

Take it out of the fridge about 15 minutes before cooking, so it's at room temperature.
Prepare your barbecue

If you’re using a gas barbecue, heat on high for 10 minutes with the lid closed.

If you’re using charcoal, fire it up and wait until there’s a good coat of ash, then pile the charcoal to one side of the BBQ to make a hot side and a cooler side.

After your BBQ heats up, use a wire brush to clean off the grates. This will help prevent sticking.
Sear the steak

Place your steaks on the grate directly over the gas flame or hot charcoal. Use tongs (not a fork) so you don’t pierce the meat and release the steak’s juices.

Cook the meat for at least three minutes without moving it. This sears the meat and gives it char-grilled marks.

Turn the meat over and let it cook for another three minutes.
Finish on low heat

To finish cooking your meat, turn the heat to medium-low on a gas bbq, or if you are cooking with charcoal, move the steak to the cooler part of the bbq.
