    Makes: 12 slices in a rectangular roasting dish

    • 300g self raising flour
    • 200g caster sugar
    • 200g unsalted butter
    • 3 large eggs
    • 2 very ripe bananas
    • 2 large handfuls sultanas or raisins
    • 2 drops vanilla extract
    • icing sugar for dusting

    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Cream the butter and sugar together until light and fluffy. Add the eggs, and whisk. Add the vanilla and flour, fold in. Mash the bananas and fold into the cake mix.
    2. Place into a well greased roasting dish. Bake in the oven for 15-20 minutes until cooked throughout.
    3. Cut into 12 slices (or more/less), then dust with icing sugar. Enjoy!

    there is no mention of temperature and didn't say at what stage you add the raisins. i baked it at175 degrees and added the raisins last.baked it in a bundt silicone tin and took me 1 hour 15minutes.  -  09 Mar 2010


    I cooked in a fan assisted for 45 mins on 175.  -  27 May 2013


    I made this delicious cake my family and me enjoyed it very much. I added the raisins just before I added the flour and cooked it in my fan assisted oven at 175 for 40 mins. Delish!  -  17 Aug 2014
