Minty lamb casserole

    This is a real favourite in my household let the slow cooker do its work and let the aromas permeate the house !!!

    Ingredients
    Serves: 5 

    • 1 shoulder of lamb
    • 3 large leeks
    • 4 large carrots
    • 1 tin butter beans (optional)
    • 2 packets minty lamb gravy mix

    Method
    Prep:15min  ›  Cook:7hr  ›  Ready in:7hr15min 

    1. Chop leeks and carrots into rings not too thin otherwise they will cook too fast place on the bottom of the slow cooker, place butter beans on top, then the shoulder of lamb. Make the gravy up according to the instructions pour over and cook on low for about 7 hours. If the gravy is too thin thicken with a little cornflour mixed with cold water. Serve in bowls with lots of crusty bread.
