Spicy veg fritters

    This is a healthy snack which can be enjoyed by all age groups at both morning or evening. It is delicious by itself, or with spicy tangy ketchup

    Serves: 2 

    • 2-3 tablespoons olive oil
    • 2 slices of white bread
    • 1 garlic clove, chopped
    • 1 egg
    • 2 tablespoons flour
    • 2 tablespoons milk
    • salt to taste
    • 1 teaspoon black pepper
    • 1/2 teaspoon red chilli powder (for a very hot flavor)
    • 1 small red onion, chopped
    • 1 small fresh plum tomato, chopped
    • 2 - 3 green chillies, chopped
    • 1-2 tablespoons grated cheese
    • few leaves of fresh coriander (optional)

    1. Heat a frying pan with 1 tablespoon of olive oil. Cut the bread slices into small pieces and toast in the frying pan with chopped garlic till crisp and light brown. Set these garlic croutons aside.
    2. In a bowl beat 1 egg and then add flour, milk, salt, pepper and red chilli powder. Mix it well till a smooth batter is formed. If the consistency looks too thick then adjust with some water.
    3. Now add finely chopped onion, tomato and green chillies to the above batter and mix well.
    4. Heat the frying pan with the remaining olive oil. Once heated, pour in the batter. Cover and cook for a minute.
    5. Turn the fritter over and immediately spread the garlic bread crutons and add the grated cheese on the top. Sprinkle few chopped coriander leaves (optional). Cover with a lid and cook for a minute.
    6. Roll the fritter and cut it into two. Serve hot with tomato sauce or chilli sauce.


    If you like to give it a non-veg flavour you can substitute cheese and coriander with boiled chicken breast pieces.

    Try it with brown bread instead of white, it tastes the same.
