About this recipe: This is one of my favourite recipes and requires little effort and time. Try out adding icing and fruit, etc.

Makes: 1 large cake

  • 200g sugar
  • 200g butter or magarine
  • 2 eggs
  • 200g self raising flour
  • 1 teaspoon vanilla extract
  • splash (2 tablespoons) milk

Prep:20min  ›  Cook:1hr  ›  Extra time:1min curing  ›  Ready in:1hr21min 

  1. Cream sugar and butter in a mixing bowl (you can use an ice cream scoop for the butter, about 1 spoon = 100g).
  2. Add the eggs and flour but do not mix in, adding then vanilla and some food colour (optional). Then add milk to the mix.
  3. Combine all ingredients and put into a medium size baking tin. Put in oven for about and hour but check every 15/40 minutes to make sure it is not burning!


1 ice cream scoop = 100g see for your self!
