Simple Veg Stir-fry

    Really simple to make vegetables can also be altered for required taste

    Serves: 2 

    • 30ml Oil (Vegatable, Sunflower or Olive)
    • 1 Small Carrot
    • 1/2 Parsnip
    • 1 Small Onion
    • Small Piece Ginger
    • 1/2 Green Pepper
    • 30ml Soy Sauce
    • 15ml Cornflour
    • 30ml veg stock

    1. Peel Carrot and Parsnip. Then cut into matchsticks
    2. Peel and Grate ginger.
    3. Slice Onion and cut green pepper into strips.
    4. Heat oil in a wok or a frying pan and stir-fry carrot and parsnip for 2 min
    5. Add onion, green pepper and ginger. Stir-fry for further 1 minute
    6. Mix cornflour and stock to a smooth cream, stir in soy sauce and add to pan/wok.
    7. Bring mixture toi boil and simmer until the vegetables are softened but still slightly cruncy to the bite


    The veg used in this dish are winter vegetables Experiment and change the Vegetable used in the dish :)


    Some thinly sliced Chicken, Beef or Quorn can also be added.
