About this recipe: This luscious cheesecake is topped with blueberries, and can be made any time of the year thanks to frozen blueberries. Use fresh blueberries if in season!


Serves: 12 

  • 85g digestive biscuit crumbs
  • 2 tablespoons caster sugar
  • 4 tablespoons melted butter
  • 450g cream cheese, softened
  • 250ml soured cream
  • 150g caster sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons plain flour
  • 4 eggs
  • 300g frozen blueberries
  • 5 tablespoons blueberry preserves

  1. Combine biscuit crumbs, 2 tablespoons sugar and butter. Pat mixture into the bottom of a 23cm springform cake tin.
  2. Mash cream cheese until soft and creamy. Gradually beat in soured cream, 150g sugar, vanilla and flour. Beat in eggs one at a time.
  3. Pour mixture into crumb-lined tin. Bake in a preheated 170 C / Gas 3 oven for 1 hour or until firm to the touch.
  4. Cool and then remove cake from tin by loosening edges with a knife. Place frozen blueberries on top of cake. Melt preserves and spoon over blueberries to glaze. Chill until ready to serve.
