    About this recipe: Mushrooms are stuffed with Gorgonzola and topped with grilled onion slices to make a stunning starter or side dish for any barbecue.

    Ingredients
    Serves: 8 

    • 500g (1 lb) fresh mushrooms, stems removed
    • 225g (8 oz) Gorgonzola
    • 3 medium onions, sliced into rings
    • 4 tablespoons olive oil

    Method
    Prep:20min  ›  Cook:5min  ›  Ready in:25min 

    1. Preheat barbecue for high heat, and lightly oil cooking grate. Fill mushroom caps with crumbled blue cheese.
    2. Place onion slices and mushrooms (cheese side up) onto the prepared grate. Turn onions over frequently until tender. Do not turn over mushrooms. Grill until blue cheese has melted, and mushrooms are tender. Remove mushrooms to a serving plate, and top with grilled onions.

    The combinaton was very good. However I was not sure what to do with the grilled onion slices. IE; on top whole, set mushroom on top of slice, chop onions and put on top?? The tase combo was great, I just wasn't sure about the presentation.  -  18 Aug 2002  (Review from Allrecipes US | Canada)

    As written, I would give this a four, but with a few additions (fresh ground black pepper, garlic salt and balsamic vinegar drizzled on top after cooking is complete, this becomes a five. Very simple to prepare. Left my onions very, very thick. I also rubbed olive oil on the outside but next time may try to marinade the mushrooms. Also, used Portobello.
