    About this recipe: This is actually more of a thick pancake than a frittata but that's what we call it in our house! Children will love this for breakfast or dessert. You can also try making this with apples instead of bananas.

    Ingredients
    Serves: 3 

    • 60g plain flour
    • 1 pinch salt
    • 2 tablespoons caster sugar
    • 4 tablespoons milk
    • 2 eggs
    • 2 large bananas, sliced
    • 2 tablespoons vegetable oil
    • 1/2 tablespoon butter

    Method
    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. In a bowl, combine the flour, salt and sugar. Gradually pour in the milk, stirring constantly, until a smooth batter is formed. Add the eggs, one at time, stirring well each addition. Stir in sliced bananas.
    2. Heat oil and butter in a 23cm non-stick frying pan over medium heat. Pour the mixture in by spoonfuls, spreading the mixture evenly across the pan. When the bottom has turned a golden brown turn the frittata and cook over low heat until golden brown on the other side. Sprinkle with sugar and serve warm.

    Used different ingredients. I used granulated sugar instead of caster sugar, and only made one serving. Turned out great!  -  12 Nov 2010

    Yum! I did however make a few minor adjustments . First, instead of sliced bananas I put the bananas in a food chopper. As for the rest of the batter I added a bit of cinnamon, vanilla extract, used half brown sugar/half white sugar and soymilk. Also, I just used enough butter to coat my pan once and I had no problems at all flipping any of the frittatas. This was a simple, easy recipe and the frittatas came out moist and wonderful.  -  30 Apr 2008  (Review from Allrecipes US | Canada)
