Easiest Baked Salmon

    Fresh fish doesn't need much doctoring to taste utterly delicious. With a good salmon fillet from your fishmonger, the simplicity of this recipe is all you need!

    Serves: 2 

    • 450g salmon fillet, halved
    • 1 small tomato, chopped
    • 5 spring onions, chopped
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper

    1. Preheat oven to 180 C / Gas 4.
    2. Place salmon on a lightly oiled baking tray or shallow baking dish, folding under thin outer edges of fillets for even cooking. Top salmon with chopped tomatoes and spring onions, and season with salt and pepper.
    3. Cook salmon in the preheated oven, uncovered, for approximately 20 minutes. Fish is done when easily flaked with a fork.
