Brennan's soda bread

    You can make buttermilk by mixing milk and vinegar. A fail-safe soda bread recipe!

    Serves: 8 

    • 250ml milk
    • 2 tablespoons white vinegar
    • 250g plain flour
    • 1 tablespoon caster sugar
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt

    1. Stir the milk and vinegar together, and allow to stand until curdled, about 10 minutes.
    2. Preheat oven to 200 C / Gas 6. Grease a baking tray. In a bowl, mix together the flour, sugar, bicarb and salt.
    3. Gradually stir the soured milk into the flour mixture until the dough just comes together, and turn the dough out onto a well-floured surface. Knead a few times and shape into a round. Place the dough onto the prepared baking tray. With a sharp knife, cut an X shape into the top of the dough to release steam and help the bread keep its round shape.
    4. Bake in the preheated oven until golden brown, about 45 minutes.

    I love soda bread, but never have buttermilk in the house. So this recipe was great! I wasn't sure if the milk & vinegar mix would work, but the bread was lovely, light on the inside & crunchy on the outside. Will definitely be making again!  -  04 Jan 2014


    I have tried several soda bread recipes but this is by far the best. Excellent bread and so easy to make. I used buttermilk as I had some in the fridge that needed used up. Will make this again.  -  28 Jun 2014


    I found that one batch of the milk/vinegar mix made two loaves, so I did . I also didn't have a tablespoon measure so I think I put too much sugar in, but it still tastes gorgeous and is a great contrast with some salted butter . I maaay have eaten most of the first loaf before it was even cold  -  03 Sep 2015
