Lamb and Bulgur Pilaf

    This is a hearty bulgur pilaf made with lamb and tomatoes. A delicious and easy one-pot dish.

    • 50g butter
    • 225g lamb, chopped
    • 2 onions, chopped
    • 275g coarse bulgur, rinsed and drained
    • 4 large tomatoes, peeled and chopped
    • 750ml chicken stock
    • salt to taste

    1. Heat butter in a large, deep frying pan over medium high heat. Cook lamb and onions until onions are very light brown. Stir in bulgur, and cook about 3 minutes. Stir in chicken stock and tomatoes. Season with salt. Bring to the boil, reduce heat and simmer until all moisture is absorbed, about 30 minutes.
